I haven’t heard from anyone on new slow-cooker recipes yet. My frozen waffles last night were delicious! Not really. I got home from volleyball at 9:30 and then had to help a puppy find his way home because he got out. I needed something quick and easy and light and those were there. I only semi regret it!!
But, one of my favorite non-slow-cooker recipes I’ve been making for years. It was something I came up with a long time ago on one of my ‘the kids need to eat healthier as well so I need to find recipes that are at least mostly healthy that the whole family can enjoy’ kicks. And it has been one of my favorites ever since. I always start craving it when we’ve gone more than a couple weeks without having it so I thought I would share it now.
We simply call it chicken and noodles and it all starts with baking some lightly seasoned chicken thighs with a light coat of fat-free Italian dressing. All this is based on taste and preference. I will generally use a little bit of salt, pepper, garlic powder and my favorite ‘spicier’ seasoning of the month. It changes regularly!
While the chicken is baking, I boil up some noodles. I like the loose spiraled noodles. I’ve got no technical name for it so you’ll just have to know what I’m talking about!
After everything is done cooking, I’ll warm up some olive oil in a skillet and mix the noodles and chicken together in it. I like to cut up some onions to cook with it as well. That, again, is an optional ingredient.
I add a little extra seasoning so the noodles get the same kind of flavor as the chicken and then drizzle the entire pan in more Italian dressing.
Then it simmers until all the flavors combine beautifully! It’s a rather simple dish. And it is all based on your taste buds – the seasoning and amount of Italian. Even the proportions are chosen by the creator. I generally use about a pound of chicken and ¾ a bag of noodles. But if you like it more chickeny or more noodly, it can be adjusted to your liking.
But it is so yummy, so simple and my kids hate it! They complain every time I make it! I don’t know what it is, but I still love it and I’m the cook so we eat! J
